We know that many people think of Iowa as just having corn – we’re perfectly fine with that. That means that we have the benefit of having the best product to make the best bourbon– Iowa Corn. Fine craftsmanship is a true reflection of Iowa’s mentality, where we do the best with what nature gives us, while maintaining minimal waste. The best corn and grains come from the most fertile soil found right here in America’s Grain Belt.
Managing every step of the production process, from grain to glass, is important to us. We store and mill our corn and grain on-site. Lautering our mash separates the liquid wort and spent grain. The wort is then fermented and distilled, while the spent grain is hauled off as animal feed for local farmers.
Twice distilling our whiskeys to a higher proof, and removing the impurities results in a cleaner, more approachable sipping whiskey. Allowing nature to be our ultimate guide in aging, we transfer the whiskey to barrels, and store them in a non-temperature controlled rick house. Iowa’s consistently inconsistent weather aids in the expansion and contraction of the barrels, allowing the whiskey to take on the rich aromas and flavors more quickly than in other regions. This being said, Mother Nature takes her cut – at a rate of 18% vs. the industry standard of 12%.

We heavily control our milling process to maximize the amount of starches in our whiskeys – this makes for a fresher tasting end product. Once our corn is milled, we then soak and boil it to begin our fermentation process. We like to make sure we have as little waste as possible, so we give that corn to a local farmer to feed some of his cattle.
Cedar Ridge whiskey is distilled twice to produce a higher proof and remove the tails (the unused portion at the end of distillation, usually mostly water). After distillation, we let our whiskey age in a non-temperature controlled rick house. This lets Mother Nature finish off our whiskey for us – she’s the ultimate distiller.
